Begin by pre-heating the oven to 180°C (fan) and lightly scoring the chicken breast.
Next, add the sesame oil, soy sauce, honey and lime juice to a bowl and mix well. Spread the marinade over the chicken and place in the fridge for 30 minutes.
Then place the chicken in a baking tray and bake in the oven for 25-30 minutes (check the chicken is cooked all the way through).
Place the bread in the toaster and toast to your desired consistency.
Slice up the avocado and load up the sandwich with the spinach on the base, followed by the chicken breast and more spinach.
